As you might know, we have two lovely cats here at home. We're really lucky to have great friends to help look after them whilst we're away. And, of course, we're really happy to reciprocate.
One of the advantages comes when your friend also has a small raspberry plot and you happen to be feeding their cat at harvest time! Every day, we've had at least one pot of raspberries to devour - sometimes they haven't even made it home as we've stuffed our faces on the way back!
And with the raspberries that we haven't scoffed, we've made some lovely things: Raspberry Puffs, some cordial and even a spot of gin!
I'll tell you about the cordial and gin later, but here's how to make a Pinwheel Puff:-
Raspberry Pinwheel Puffs
These are super simple...
Preheat the oven to 200oC.
Take one pack of ready rolled puff pastry, cut into squares. Cut from each corner towards the centre, but don't cut all the way through.
Place a small dollop of jam and top up with a few raspberries.
Fold 4 of the triangles into the centre.
Brush with beaten egg or milk, then place on a baking sheet. Bake for 10 minutes or until browned.
